At supply and demand, as long as you demand, they’ll supply. So you won’t ever be caught in a situation where they have no food to serve you. If Benedict Cumberbatch’s your teenage crush, then I have to say that you really need to try these poached eggs named after him.
A little bit of history about why these poached eggs are so special and why it is named as such- why not Eggs Thomas or Eggs Peter but EGGS BENEDICT? Back in the 1860s, Delmonico Restaurant in the United States encountered with the fussiest patron ever- Mrs. LeGrand Benedict. Mrs Benedict found nothing in the restaurant to her liking and asked the chef out for a discussion on what they can serve her (it sounds quite ridiculous in today’s context but it is rumoured to be the case).
Another version of the origin of Eggs Benedict is that in 1942, Lemuel Benedict (a Wall Street broker) was suffering from a serious hangover one fine day. He walked into Waldorf Hotel in New York and ordered some poached eggs with hollandaise sauce and there you go, the chef placed this dish on the menu and it was probably beyond his imagination how this recipe would become so popular around the world today.
There are usually a few Eggs Ben dishes on cafes’ menu- Eggs Benedict, Eggs Florentine and Eggs Royale. Don’t panic! Take your time to choose as they’re all equally nice, it’s just that the ingredients are slightly varied BUT you’ll still get two warm poached eggs rested on your toast!
At supply and demand, the Eggs Ben are not only flavourful but the dish is one of the most well-presented as well. With thoroughly smoked salmon wrapped around them, the two poached eggs snuggle comfortably on the crispy sliced baguette and await you to dig in. You may choose to savour the unseasoned poached eggs in their minimalistic taste or go with a tad of hollandaise sauce to perk up the flavour.
